It’s finally that time of the year! As winter break slowly approaches, students are trying to finish up their last remaining assignments and to get ahead on studying for Finals. The week before break will be hectic, but who cares when vacation is right around the corner. Before everyone leaves on their merry way, why not learn a few recipes to use over the long winter break. Cooking or baking, whichever you decide, are just a couple ways to entertain your trip. That being said, here are some fun, do-it-yourself holiday treat ideas that you can learn to make for or even with friends and family:
Easy Peanut Butter Cup Cookies

Ingredients: 1 ¾ cups all-purpose flour
½ teaspoon salt 1 teaspoon baking soda½ cup butter (softened) ½ cup white sugar ½ cup peanut butter ½ cup packed brown sugar 1 egg (beaten) 1 teaspoon vanilla extract 2 tablespoons milk 40 miniature chocolate covered peanut butter cup Instructions 1). Preheat the oven to 375 degrees F (190 degrees C). Whisk together the flour, salt and baking soda. Set aside. 2). Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture and mix well. Roll the dough into 40 balls and place each into an ungreased mini muffin pan. The balls should be about 3/4 inch in diameter. 3). Bake at 375 degrees for about 8 minutes. Do not overbake! Remove from the oven and immediately press a mini peanut butter cup into each ball. 4). Place in the freezer for about 7 minutes and allow the cookies to chill. Pop each cookie out of the muffin tin. 5). Enjoy! |

2 c. milk 1 1/2 c. half-and-half 3/4 c. white chocolate chips, plus more for topping 1/2 tsp. kosher salt 1 1/2 tsp. vanilla extract Mini marshmallows, for topping Instructions: 1). Heat the milk and half-and-half in a saucepan over medium-low heat. Stir in ¾ cup white chocolate chips until melted, then stir in the salt and vanilla. 2). Pour into mugs and top with mini marshmallows and more white chocolate chips. |

Ingredients:
9 cups Kellogg’s Rice Krispie Cereal 9 cups Mini Marshmallows 9 tablespoons Butter (Sweet Cream, Salted) Wilton Color Right Food Coloring - Red, Crimson, Yellow, Blue Nonpareils Christmas Sprinkles Instructions: 1). Melt 3 tbsp. Butter in a medium pan. 2). Add 3 cups of Mini Marshmallows and stir until the marshmallows are completely melted 3). Take the pan off the heat. 4). Add food coloring and mix 5). Add 3 cups of Rice Krispie Cereal and mix until they are completely covered with the marshmallow mixture. 6). Add the Christmas Sprinkles (Optional) 7). Allow the Rice Krispie Mixture to cool slightly. 8). Measure .6 oz of mixture and roll into a ball. 9). Allow Rice Krispie Bites to cool. 10). Repeat for the other two Christmas colors. |

Instructions: 1). Line a square 8 x 8 pan with foil and smooth the surface. Spray foil with nonstick spray. 2). Combine the chocolate chips and sweetened condensed milk in a double boiler over medium heat. Heat until melted, about 5-7 minutes. Stir until smooth, then immediately pour it into the foil-lined pan. Use an offset spatula to smooth the surface, then sprinkle on the crushed peppermints. 3). Refrigerate for 2 hours, then cut into small squares. |
